Absinthe sets

Someone wrote me:
I scored a couple bottles of the local Absinthe at Swirl on Castro (cute little wine bar where the help will swill with you – great fun). I haven't cracked it open yet because I feel like really doing it justice and serving the classic way. Any advice on where to find the necessary gear?
Good question. I imagine there is a total run on absinthe fountains right about now. I don't know offhand anyone selling them in San Francisco- please write in the comments if you do. But one store that sells them online is Bar Keeper in Los Angeles. Follow this link to the absinthe section. If you don't want to shell out $200 for the small fountain, you can make due without one. The absinthe spoons are nice, but you can probably use a slotted spoon or tea strainer to the same effect. The way I've enjoyed it most is to make an absinthe frappe. Use 1 1/2 ounces of absinthe and 1/2 ounce of simple syrup and pour it over cracked ice. Then swirl and swirl until much of it melts. I found that the Lucid and St. George absinthes needed more sugar (and water) than the Kubler. Enjoy!

Culinaire, in the Ferry Building, has a four-spout reproduction absinthe fountain for about $800 right now. Seems a little steep for a repro, but I guess that real estate doesn't come cheap.

A water pitcher and a mesh strainer works just fine, however.

La Maison d'Absinthe has some fountains, and the Lucid store has the best prices I've seen-- $135 for a two-spigot fountain. It's all the same "Frenchman" brand stuff btw, made in China and pretty shoddy, but it's all there is.

fwiw a carafe for slow dribbling is as authentic as a fountain, maybe more so, and a bent fork or regular spoon or tea strainer stands in fine for an absinthe spoon.

If you want to make/rig something yourself to drip, check out the big iced tea infusers/dispensers-- saw some for $17 at Sur la Table on Maiden Lane the other day. There's also the (in)famous Lowe's mouthwash dispenser on a pedestal. For more homemade fountains, check out the Fountain Making thread at the Wormwood Society-- good leads on makeshift dripping.

I do just fine without the fountain..would be nice to have, but just for looks. I have used forks before, but takes away from the experience. Got some nice Absinthe spoons on eBay for 8.95 each...

The glow of the Absinthe fountains must have really been the bomb in an age without a/c and ice the luxury, and as such an inviting sight at on the bar. But have you ever gone to the bar, ordered a traditional, then stood there watching drip-drip-drip? Ritual aside, it's just fine served like a pastis.
